To beat this food inflation , instead of taking one vegetable a day start taking different vegetables in a small quantity. Because that could offset the vitamin deficiency . First of all, set the daily budget for vegetables . Make sure you don't exceed that budget. Instead of avoiding certain vegetables , start consuming all vegetables within that budget (as far as possible). Certain shift in food consumption could also mitigate the "bites" of the inflation. People can try millets, rye,oats etc.
